Moringa Chocolate Peanut Butter Oat Balls

My inspiration: the “Fudge Chew” from my childhood days which is more commonly known as the No Bake Candy Cookie.  Fudge Chews have long since been one of my dad’s favorite “cookies”!  Sweet memories from one of the first recipes that I learned to make independently…got me thinking how to have something to occasionally indulge but to eliminate the processed sugar and, you know….incorporate Moringa because that is what we love to do here at A Healthy Leaf!  My girls literally think we can add Moringa to anything….and they may not be too far from the truth!

These “may” have been my “go to” for those nights you crave something sweet and, need I say, Chocolatey–for those last days before delivering my sweet baby boy.  Moringa Chocolate Peanut Butter Oat Balls can be easily tossed together in one dish for a single serving (who needs exact measurements?!) or an entire recipe to share or store up in your refrigerator or freezer for a quick treat or energy boost when your kids are occupied for a couple of minutes and you need a Moment!

While this is not a low-calorie batter, with self-control it can be a satisfying alternative to the No Bake Candy Cookie.  It is a smooth combination of nut butter, cold-pressed coconut oil, raw honey stirred into a generous amount of raw cacao powder and 1-2 Tbsp of Moringa Powder.  Once this is thoroughly mixed, add in oats and maybe some coconut shreds (always a favorite of my dad’s).  If you prefer more crunch, throw in some crushed nuts; and occasionally, if you’re just needing a bit more chocolate, toss in some mini chocolate chips.

This is also a terrific recipe to promote “kitchen confidence” independence with your kids in the kitchen.  Depending on the temperature of your home, it can require no heating.  Basically a bowl and spoon will do the trick.  Perfectly imperfect measurements are acceptable as this recipe has very few rights and wrongs!  Why not bond with your kiddos!

Ingredients
  • 3/4 cup crunchy peanut butter *substitute nut butter of choice
  • 2 Tbsp cold-pressed coconut oil softened or melted
  • 1/3 cup honey more or less to taste
  • 1 tsp homemade vanilla
  • 1/4 cup raw cacao powder *increase as desired if omitting chocolate
  • 1 Tbsp raw Moringa powder more or less to taste--our family actually uses 2 Tbsp
  • pinch pink Himalayan salt to taste
  • 1 cup rolled oats (GF)
  • 1 cup unsweetened coconut shreds
  • 1/3 cup mini chocolate chips/bits finely chopped or slightly melted
  • 3 Tbsp whole milk adjust consistency
Servings: cookies
Instructions
  1. (If you live in a colder climate, place coconut oil in small pot on the stove and warm till easy to stir or beginning to melt; remove from heat.) Add in peanut butter and stir until combined.
  2. Drizzle in honey and vanilla and add cacao and Moringa powder. Sprinkle salt to taste.
  3. Pour in your unique 2 cup combination of oats and coconut shreds. (We generally use 1:1).
  4. Mix in chocolate if desired. If using chocolate, stir in room temperature or slightly melted mini chips, bits. (The cookie dough consistency should be somewhat dry but hold form easily. If necessary, adjust consistency with splash of milk. Too much milk will make a sticky dough! )
  5. Roll into balls and place in mini liners or on serving plate or storage container.
Recipe Notes

*If using the softened chocolate, pop the cookies into the refrigerator to harden a bit before serving. Store in refrigerator or freezer to prolong shelf life.
