- 1 pound bacon Crumbled
- 1/2 cup onion finely diced
- 1 Tbsp garlic minced or to taste
- 1 jalapeno seeded and minced
- 8 cups corn
- 8 ounces cream cheese softened
- 1 cup mozzarella cheese shredded
- 1/4 tsp salt or to taste
- black pepper sprinkle to taste
- cayenne pepper sprinkle to taste
- 2 Tbsp green onions chopped and divided
- 1 cup red bell pepper diced
- 1 cup packed fresh Moringa leaves chopped
- Preheat oven to 400 F
- Prepare bacon and crumble. Set aside.
- Use small amount of bacon grease to season cast iron skillet. Saute diced onion, minced garlic, and jalapeño pepper for a couple minutes.
- Stir in corn and incorporate cream cheese thoroughly.
- To the skillet, add seasoning /spices (salt, black pepper, cayenne pepper) and mozzarella cheese and half the crumbled bacon.
- Mix in 1 Tbsp of Green onion or more/less to taste.
- Add diced red pepper.
- Option: Stir in chopped Moringa leaves now for simplicity or wait until after warming to reduce exposure to high heat and maximize nutritional content.
- Bake for 20 min until warm.
- Remove from oven and sprinkle with remaining bacon, green onions, Moringa leaves, and cheese for garnish.
- Serve warm with tortilla chips.
