Use small amount of bacon grease to season cast iron skillet. Saute diced onion, minced garlic, and jalapeƱo pepper for a couple minutes.
Stir in corn and incorporate cream cheese thoroughly.
To the skillet, add seasoning /spices (salt, black pepper, cayenne pepper) and mozzarella cheese and half the crumbled bacon.
Mix in 1 Tbsp of Green onion or more/less to taste.
Add diced red pepper.
Option: Stir in chopped Moringa leaves now for simplicity or wait until after warming to reduce exposure to high heat and maximize nutritional content.
Bake for 20 min until warm.
Remove from oven and sprinkle with remaining bacon, green onions, Moringa leaves, and cheese for garnish.
