Ingredients
Pudding
  • 3 medium bananas
  • 2/3 cup cashews
  • 3 Tbsp maple syrup
  • 2 Tbsp cacao powder
  • 1 Tbsp Moringa powder (more to taste)
  • 2 Tbsp peanut butter powder (optional)
  • 2 tsp vanilla extract
  • 2 Tbsp cacao butter melted
Brownie
  • 2/3 cup medjool dates (pitted) packed
  • 2 Tbsp cacao powder
  • 1 Tbsp maca powder
  • 1 tsp Moringa powder (or more to taste)
  • 2 tsp vanilla extract
  • 1 tsp water
  • 1 1/3 cup pecans
Assembly and Garnish
  • 2 ripe bananas sliced /diced
  • 72% or > cacao dark Chocolate chopped

Instructions
  1. To prepare pudding: puree bananas in food processor or high power blender. Add cashews, maple syrup, 3 powders, and extract. Pulse until smooth. Finally, incorporate melted cacao butter. Cover and Chill in freezer for 2 hours or refrigerator for 5 hours.
  2. Combine 1/2 of the pecans, the dates, 3 powders, extract and water in food processor or high power blender until crumbly. Add remaining pecans and pulse to incorporate. Do not over process or brownie will become oily. Set aside.
  3. Assemble in jar or glass dish by alternating layers of banana, pudding, brownie. Add garnish and enjoy. Can be divided between 4 oz jars.
