Moringa Overnight Oats with a Tropical Flare

Ingredients
  • 1cup oats
  • 1tbsp Moringa powder
  • 1tbsp chia seed
  • 1/2tsp cinnamon
  • pinch saltto taste
  • 2tbsp unsweetened coconut shreds
  • 1cup mango chunks
  • 1/2cup whole raw almondsalternative: sliced, chopped, creamed–adjust amount

  • 1/3cup pineapple juiceto taste and consistency
  • 1tsp vanilla extract

Instructions
  1. In medium bowl or quart size jar, add oats, Moringa powder (optional: can stir in after warming in the morning), salt, cinnamon, chia seeds, coconut shreds, and choice of nuts. Stir to thoroughly mix. (Note: If mixing in the same jar you plan to store in, it is easier to do dry ingredients first otherwise feel free to mix all the ingredients at once.)
  2. Measure out kefir, milk of choice, and fresh fruit juice (to sweeten and add flavor). Pour slowly into dry ingredients. Splash in vanilla, and additional sweeter if desired. Stir until all the ingredients are wet. (*Note: We actually prefer to first add only the strained room-temperature kefir. We mix thoroughly wetting all the oats, nuts and seeds. This mixture of oats sits for several hours on the counter before we add the remaining ingredients)
  3. Incorporate chunks of mango.
  4. Store in sealed container for 24 hr or just overnight. Serve warm or cold. Drizzle with warmed coconut oil or maple syrup. Garnish with additional fruit or coconut. Enjoy!
