Ingredients
  • 1 cup pistachios shelled and coarsely chopped (possibly less)
  • 8 ounces cream cheese full fat
  • 4 ounces goat cheese
  • 3/4 cup dried mixed berries coursely chopped
  • 1/2 tsp pink Himalayan salt
  • black pepper to taste
  • 1 tsp fresh lemon juice
  • 4 tsp lemon zest
  • 2 Tbsp Moringa powder per preference 1-2 Tbsp

Instructions
  1. Roughly chop pistachios. Place in a bowl. Stir in Moringa powder and set aside. (If available, use a food processor or high powered blender to lightly pulse to desired consistency. FYI: The finer the final product, the fewer pistachios required for coating.)
  2. Cream goat cheese and cream cheese together in a medium bowl.
  3. Chop berries or pulse in a food processor/blender.
  4. Stir mixed berries, salt, pepper, lemon juice, and lemon zest into the cheese mixture.
  5. Refrigerate for one hour prior to forming into balls. (Smaller balls work well as an appetizer with crackers; larger balls work well in addition to a salad.)
  6. Roll cheese balls in pistachio/Moringa mixture.
  7. Serve with your choice of greens or crackers.
